Ingredients 1 bag off 250g butternut chopped (you can buy a whole butternut and cut it into blocks) 1 bag of 200g diced bacon 1 cup of flour 1/4 cup of cream 1 egg 2 teaspoons of baking powder 1 teaspoon of cinnamon 2 teaspoons of sugar Rosemary Olive oil 125g Butter cut into cubes Mascarpone (optional) Maple syrup Method Roast butternut with olive oil and if you have rosemary on 200’c in the oven until the butternut is soft and black charry bits formed - don’t me afraid this will add flavour to the butternut Fry bacon in a pan with olive oil and butter Once the butternut comes warm out of the oven, mash it in a mixing bowl with a masher Add the bacon with the fat from the bacon in the pan Add the rest of the ingredients and mix well You can make this recipe like Niel did in a jaffle pan over the fire - make sure to spray the jaffle pan very very very well. Braai on the fire until you are happy with the colour and doneness If you choose to make it in a muffin pan. Spray the muffin pan very well and fill the muffin holders 3/4 full.
