Ingredients 3 kg of prime beef (steak) 1 liter of lard 10 Galeana potatoes 1/2 chopped onion 1/2 sliced onion 1/4 bunch of cilantro 3 cloves of garlic 6 bay leaves 1 kg of yellow corn tortillas Garlic salt Pepper "Guacamole" Salsa Ingredients 1 medium zucchini 6 medium tomatillos 1/4 bunch of cilantro 4 serrano peppers Garlic salt Vegetable oil Instructions for the tacos: [ ] First, heat the liter of lard in a large skillet along with the garlic cloves and bay leaves. Once it's boiling, add the Galeana potatoes and the beef. Cook the beef in batches since it might not all fit at once. Cook over high heat until the beef is tender. Once the meat is cooked through, remove it and set it aside in another pan. To check if the potatoes are cooked, insert a fork; if it comes out easily, they are done. [ ] Once the meat is cooked, chop it and transfer it to another pan with a large spoonful of lard from the pan where the meat was cooked. Add a spoonful of pepper and a spoonful of garlic to the chicken and brown it for 5 minutes over high heat. [ ] In another pan, sauté the sliced onion in lard from the meat pan over medium heat until golden brown and soft. [ ] Finally, chop 1/4 of an onion and 1/4 of a bunch of cilantro. Procedure for the "Fake" Salsa: [ ] Boil the zucchini (cut into quarters), the tomatoes, and the chili pepper until they change color, about 8 minutes over high heat. [ ] Next, we transfer this to a blender along with 1/4 bunch of cilantro, 1 tablespoon of garlic salt, and about 3 tablespoons of oil. We blend for about 3 minutes until it has a creamy consistency. And that's it!
