" Chicken Pulao & Salad " Bajias Cooking

Ingredients: 1. Chicken Pulao Recipe | چکن پلاؤ کی ترکیب Ingredients | اجزاء: Chicken (چکن): 1.25 – 1.5 kg Rice (چاول): 4 cups (Basmati) Onions (پیاز): 2 medium, sliced Oil (تیل): ¾ cup Garlic (لہسن): 1 whole bulb (ground with ½ cup water) Ginger (ادرک): 1 large piece, sliced into rounds Whole Spices (ثابت گرم مصالحہ): White Cumin (سفید زیرہ): 1.5 tsp Black Peppercorns (ثابت کالی مرچ): 1.5 tsp Cloves (لونگ): ¾ tsp Cinnamon (دار چینی): 1.5 finger-length pieces Black Cardamom (بڑی الائچی): 4–5 pieces Whole Red Chilies (ثابت لال مرچ): 6–8 pieces Black Cumin/Shahi Zeera (شاہ زیرہ): A pinch for the end Ground Spices (پیسے ہوئے مصالحے): Salt (نمک): 3–4 tsp (to taste) Coriander Powder (پیسا ہوا دھنیا): 1.5 tsp Water (پانی): Approx. 5.5 cups total liquid Method | طریقہ کار: English: Fry Onions: Heat oil and fry onions until light pink/golden. Do not over-brown them. Add Spices & Chicken: Add all whole spices, then the chicken. Sauté on high heat until the chicken changes color. Aromatics: Pour in the garlic water and add ginger slices, salt, and coriander powder. Simmer: Cook on high heat uncovered so the chicken juices lock in without the meat getting too soft. Rice & Liquid: Transfer to a rice cooker (optional) or stay in the pot. Add 4 cups of soaked rice and the calculated water (approx. 5.5 cups total liquid). The "Dum": When water evaporates, sprinkle Shahi Zeera on top and let it steam (dum) until fluffy. Mix with salt, fresh lemon juice, and a drizzle of olive oil for a simple French-style dressing. Urdu: تمام سبزیوں کو باریک کاٹ لیں۔ اس میں نمک، لیموں کا رس اور تھوڑا سا زیتون کا تیل شامل کر کے اچھی طرح مکس کر لیں۔ This combination makes for a perfect, flavorful meal!
