This vegetable is called Artichoke. This is very famous in Turkey and in Italy. I have seen to many videos of how they clean the flower and cook the heart of the flower. This flower easily oxidized or turn brown so you have to use lemon water when cleaning this vegetable. This is a flower and the one that you can eat is the one they called artichoke heart. Cleaning the flower is the hardest part but I have seen people how easy for them to clean it. My fault was I did not clean it right away after I harvest them while the petals was still tender. I let it stayed in the fridge and it dries out. There are many simple ways to cook this flower but I just air fry them and oh my God they taste really good. My husband is correct the texture is like a sweet potato but I could not explain the taste. It's just too good. Good thing doesn't come easily. It's really hard to clean them but the reward is so amazing.
