A simple recipe with Burgundian flavors that will delight your guests and your wallet! *** Recipe Details *** Ingredients: 1 ham nub 4 carrots, 4 onions 1 leek, 1 bouquet garni 40cl Chablis cheese 3 shallots, tarragon 1 celery stalk 150g butter 2l cooking juices 20cl heavy cream 70g flour 150g tomato paste Recipe: 1/ Cut the celery into quarters. Wrap the four pieces in foil. Place in the oven at 120°C for 3 hours. 2/ Prepare the bouquet garni with bay leaf, parsley, thyme, tarragon, and a leek. Peel the vegetables. 3/ Place the bouquet garni and vegetables at the bottom of a pot. Place the meat on top. Cover with the rind. Pour in the Chablis and finish by adding water to cover. Cook for 2 hours. 4/ Melt butter in a saucepan, add the chopped shallots, tarragon, and pepper. Sweat without browning. Pour in the vinegar. Reduce and add the Chablis. Tips: 1.
