Kisses ❤️ ✨Subscribe: https://goo.gl/ByGord ✨And follow me on Instagram: @denisekuperman INGREDIENTS: 500g Dried Coconut Pulp (measured without the brown skin) (approximately 2 small coconuts or 1 1/2 large coconuts) 500ml Boiling Water 1 cup Demerara Sugar HOW TO MAKE: Remove the coconut pulp and "peel" the brown skin with a vegetable peeler and a small knife. NOTE: Support the piece on the cutting board and cut in the direction of the board to avoid cutting your hand! In a blender, blend half of the coconut with all the boiling water until VERY finely crushed. Strain through a cloth over a sieve until the last drop is extracted! Boil this first milk and add it to the blender with the second half of the coconut. Blend until VERY finely crushed. Again, strain through the cloth over the sieve until the last drop is extracted. Transfer this final milk to a thick-bottomed, wide-mouthed saucepan with the sugar over high heat. Stir constantly, without stopping, until it reduces significantly and becomes a thick liquid (but still liquid!). To check if it's at the right consistency, drop a large drop onto a cold plate. The drop should run slowly. (If the pan is thick and wide like mine, it takes around 10 to 15 minutes. The smaller the pan, the longer it will take to reach the right consistency.) Transfer to a stand mixer and beat until completely cool. It takes a while to cool, but it's worth it because this step incorporates air into the condensed milk and gives it the velvety texture we're used to. Yields more than a can of sweetened condensed milk! Store in a sealed container in the refrigerator. (When chilled, the condensed milk acquires a firmer consistency!)
