Biskut kelapa, biskut legend yang tidak kurang ramai peminatnya. Kali ini saya olah biskut kelapa ni dengan versi tanpa telur. Cara membuat biskut ini memang banyak menggunakan tepung ubi, dan disangai dahulu tepungnya supaya ringan. jadi tekstur biskut kelapa ini seperti biskut bangkit. Saya pakai kelapa kering saja kerana teksturnya lebih halus dan tahan lebih lama, nak biskut lebih wangi, kita sangai sekejap sampai kelapa ni perang sikit. Biskut ini tidak muak dimakan, dan tidak terlalu manis menurut saya. Peminat biskut kelapa bolehlah cuba membuatnya sendiri di rumah. Selamat mencuba! Jumlah biskut : Anggaran 120 keping BAHAN-BAHAN : 320 gm mentega bergaram lembut/ marjerin | 1 dan 1/3 cawan dan 2 sudu besar 150 ke 160 gm gula kastor/ gula pasir dikisar halus | 3/4 cawan dan 1 sudu besar 1/2 sudu teh esen vanilla 230 gm tepung ubi | 2 cawan 75 gm tepung tepung jagung | 2/3 cawan 125 gm tepung gandum | 1 cawan 2 gm baking powder | 1/2 sudu teh 95 gm kelapa kering | 1 dan 1/2 cawan Hirisan ceri merah dan hijau untuk hiasan SUHU MEMBAKAR : 170℃, 25 ke 30 minit, atau sehingga bahagian tapak biskut sedikit keperangan, api atas bawah. Panaskan ketuhar 10 ke 15 minit. ========================================================================== [ENGLISH] Coconut cookies, an evergreen cookies, loved by many due to it's unique flavor and texture. This time I made the eggless version and can be made without a mixer. It is made with 3 types of flour with tapioca flour has the highest ratio. The flours are dry fried to get lighter cookie texture, like kueh bangkit. I used desiccated coconut as it has finer texture and the cookies can last longer. To enhance the coconut aroma, the desiccated coconut are dry fried until light brown. If you love coconut cookies, you'll like this cookies. It is crunchy and moderately sweet to me. Happy baking! Yields : About 120 pcs INGREDIENTS : 320 gm softened salted butter/ margarine | 1 and 1/3 cups and 2 tbsp 150 to 160 gm caster sugar or finely ground sugar | 3/4 cup and 1 tbsp 1/2 tsp vanilla essence 230 gm tapioca flour | 2 cups 75 gm cornstarch or corn flour | 2/3 cup 125 gm all purpose flour | 1 cup 2 gm baking powder | 1/2 tsp 95 gm desiccated coconut | 1 and 1/2 cups Diced red and green cherries BAKING TEMPERATURE : 170℃, 25 to 30 minutes, or until cookie base is slightly brown. Bak with top and bottom fire.
