Ingredients: 1 lbs. egg noodles ½ lbs. shrimp 3 eggs 3 garlic cloves 2 slices ginger Spring onions 1 cup cut vegetables (snow pea tips or bok choy) To marinate the shrimp: 1 garlic clove 1 slice ginger 1 tsp light soy sauce 1 tsp dark soy sauce ½ tsp black pepper ½ tsp salt 1 tbsp. oyster sauce Boil the noodles to your desired softness. Drain and wash under running water. Beat 3 eggs with ¼ tsp salt, ¼ tsp black pepper and fry as shown. Set aside with some long cut spring onions. Lightly stir fry the shrimp and set aside. Fry ginger, garlic, spring onions, 1 tsp black pepper, 1 tsp salt, the veggies and the noodles. Add 1 tsp light soy sauce, 1 tsp dark soy sauce, 1 tbsp. oyster sauce. Add the shrimp, eggs and spring onions and stir. ENJOY!
