CRISPY FISH FINGERS Ingredients 2 rawas fish fillets 4 tbsps dry bread crumbs 4 tbsps cornflakes Salt to taste ¾ tsp red chilli powder 2 tsps lemon juice 1 tbsp refined flour (maida) 1 egg Oil spray, as required Method 1. Preheat oven to 200 °C/ 400 °F. Keep a silicon sheet on a baking tray. 2. For the coating grind dry breadcrumbs, cornflakes, salt and ½ tsp red chilli powder and put in a bowl. 3. Cut fish fillets into fingers. Sprinkle lemon juice, salt, ¼ tsp red chilli powder and refined flour and mix, ensuring that the fish fingers are well coated. 4. Break an egg into a bowl and beat. Dip the fish fingers in the egg, roll in the spiced breadcrumbs and keep on the silicon sheet. 5. Spray oil or brush with oil and cook in the preheated oven for 15 minutes. Check once in between to see if the fish is cooked. Serve hot.
