Fried Florida Mullet Yield 4 Servings Ingredients Canola oil for frying 1 large Florida egg 1 teaspoon water 1/2 cup all-purpose natural flour 1/2 bunch flat leaf parsley, chopped 1/2 cup cornmeal 1/4 teaspoon cayenne pepper Sea salt and fresh ground pepper to taste Four 6-ounce Florida mullet fillets Florida lemon slices Preparation Heat oil to 375 degrees F in deep fryer or deep saucepan. Whisk together egg and water in a shallow dish. Combine flour, cornmeal, cayenne, parsley, salt and pepper; mix well. Dip fillets into egg wash then into flour mixture to coat. Deep fry fish in hot oil for 4-5 minutes until fish is golden brown. Drain and serve with lemon slices. Green bean salad Serves 6-8 Ingredients 1 1/2 pound Florida green beans, trimmed and blanched 1 Florida bell pepper, sliced thin 1/2 medium onion, chopped 1 tablespoon olive oil Juice from 1/2 a lemon 1 1/2 teaspoon kosher salt 1/2 teaspoon black pepper Preparation Combine all ingredients in a mixing bowl. Stir to coat. Taste and adjust seasoning with salt and pepper.
