Then add salt and mix. 02:35 Stir in the chopped prawns and chopped olives. 02:59 How to make homemade mayonnaise. 04:31 Thin the mayonnaise by gradually adding and mixing in water. 04:58 Add the mayonnaise to the ingredients and mix well. 05:15 Final presentation of the Malaga-style "Hormigo" (Malaga-style "Hormigo") MALAGA-STYLE "HORMIGÓN" (MALAGA-STYLE POTATO SALAD) 🛒 Ingredients (serves 4): 🔸 800 g potatoes (2 lb) 🔹 600 g raw, unpeeled prawns (21.4 oz) 🔸 120 g olives (4.2 oz) 🔹 100 g salt (3.5 oz) 🔸 Breadsticks (to serve) Mayonnaise: 🔹 1 egg (at room temperature) 🔸 50 ml olive oil (¼ cup) 🔹 150 ml sunflower oil (⅔ cup) 🔸 1 teaspoon vinegar (5 ml / 1 tsp) 🔹 50 ml of water (approximately) (¼ cup) 🔸 A pinch of salt 🍳 Malaga-style Hormigón recipe, step by step: 1️⃣ Boil the potatoes in their skins. When tender, remove and let cool slightly. 2️⃣ Remove the vein from the prawns: insert a toothpick between the second and third shell segments from the head, pierce the flesh just below the vein, and gently pull upwards to remove it whole. This will prevent that bitter, earthy taste. 3️⃣ Bring plenty of water to a boil with a little salt. When boiling, add half of the prawns; they will be ready in a short time, between 1 and 2 minutes. When you see them float, remove them with a slotted spoon. Next, place them in a large bowl with water mixed with 100g of salt and plenty of ice to keep it very cold and stop the cooking process. Cook the second batch. Don't soak the prawns for more than 5 minutes. Drain them, peel them, and cut each into three pieces (set aside 3 or 4 for garnish). 4️⃣ Prepare the mayonnaise. If using a blender, add the egg, a pinch of salt, and the vinegar. Then, pour in the olive oil and the sunflower oil. Submerge your immersion blender to the bottom. Start blending and don't move the blender. When you see it starting to emulsify, make slow circular motions at the base. Then, make very slow up-and-down movements until all the oil is incorporated. Since mayonnaise is thick and this recipe requires a thin consistency, we'll achieve that texture by mixing in water. Add it little by little. In the end, I needed about 50 ml. 5️⃣ Chop the olives. 6️⃣ Peel the potatoes and place them in a large bowl. Break them up with a fork (don't mash them, just break them into small pieces). Add a little salt and mix. Add the prawns and olives. Mix again. Gradually incorporate the mayonnaise into the salad, reserving a little. 7️⃣ When serving this Malaga-style salad, pour the reserved mayonnaise over the top and garnish with whole prawns. Serve with breadsticks. 👌 Notes for making Malaga-style concrete salad: 🦐Some cooks like to add a little garlic to the mayonnaise. 🦐Personally, I like to add a little olive oil to the mayonnaise. If you find it too strong, you can make it with just sunflower oil.
