He first stops at Christian Mercier's traditional café, over 100 years old, where he meets Philippe Olivier, a cheese refiner and merchant in Boulogne, to enjoy a typical Northern breakfast of coffee, butter, and cheese. They then visit an abbey to meet Brother Bernard Marie, the monk in charge of the cheese dairy that supports the community, who explains how cheese curds evolve according to the milk harvest season. At a farm brewery in Bailleul, Christiane Becque discusses the brewing and preservation of traditional farmhouse beer. Next, we head to Boulogne-sur-Mer, where Joël Couru, a salter and smoker, presents "gendarmes" (herrings lined up for smoking) and explains how to enjoy them. Finally, Petitrenaud meets up with Roland Gauthier and Christian Germain, chef at the Château de Montreuil's La Grenouillère restaurant, to wrap up the program.
