Before you even enter the church, something very important and hidden from the eyes of the laity is already happening. The Liturgy begins in private, behind the iconostasis, in the quiet of the altar. The priest stands in the altar and does something very strange to the uninitiated. He takes a prosphora—a round loaf of bread—and begins cutting it with a special knife. He cuts a cube out of the center. Then he carefully removes the small pieces and arranges them on a gold platter in a precise order. From the outside, it all looks like a surgical operation. Why all this?
