Contagious joy and enthusiasm for good food: those who knew Adriana Restano know that she exuded these two virtues and gave them to anyone who crossed her path. The chef and owner of Nina Pasta Bar, who passed away unexpectedly on December 30th at the age of 44, was famous in Madrid's La Latina neighborhood as much for her friendliness as for the amazing Italian dishes she served. Her spaghetti carbonara, her "gnocchi bravos," or her Capote papardelle with oxtail drew on family tradition (the "Nina" in the restaurant's name was Adriana's grandmother), but infused it with authentic touches, free from prejudice and with a great sense of humor. If you haven't been to Nina Pasta Bar, you may have seen Adriana in action on the show Banana Split, cooking some unforgettable Ñocchi On The Block. Or here, at El Comidista, blind-tasting supermarket mozzarellas and demonstrating everything she knew about cheese. When we filmed that tasting, in September of last year, Restano also taught us how to prepare mulignane a fungitiello, a typical Neapolitan eggplant with tomato sauce that her grandmother Nina used to make for her when she visited her house. In tribute to Adriana, and with the consent of her family, we are now publishing these images: we believe that sharing one of her recipes so that anyone can make it is the best way to honor her memory.
