Stuffed Marrow

In this video I show how to cook a stuffed marrow. Serves 6 Ingredients: 1 marrow 500g beef mince 1 sprig of Rosemary 1 medium onion 2 shallots 1 courgette 3 carrots 2 garlic cloves 1 tin of plum or chopped tomatoes Salt & Pepper to taste Cooking oil or butter Method: Dice the onion, carrot, garlic, and herbs and soften in a pan with butter. Meanwhile chop the marrow into 6 segments and scoop out the seeds. Discard the innards or save for soup. Start boiling the marrow segments in a big pan. Put the oven on gasmark 6 to heat up. Add the beef and the courgette to the pan and cook until the beef is browned. Add the tomatoes, cook and season to taste. When the marrow is tender, remove the segments, put on a baking tray and fill with the beef mixture. Top with cheese. Cook in the oven for 25 minutes or until the cheese is browned slightly, whichever is sooner. Serve and enjoy
