Tomato Jam - Sunday Subscriber Series #72- A Tasty Relish that’s so Versatile! Great on a Sandwich!

Tomato Jam 5 pounds tomatoes, finely chopped but not peeled 3 1/2 cups sugar 8 Tablespoons bottled lime juice 2 teaspoons freshly grated ginger 1 teaspoon cinnamon 1 1/2 teaspoons ground cloves (we’d prefer less)* 1 Tablespoon salt 1 Tablespoon red chili flakes (adjust to taste) Combine all ingredients in a nonreactive pot. (Do not use an aluminum pan!) Bring to a boil, reduce temperature to a soft boil or simmer, and stir regularly for 1 to 1 1/2 hours or just until the mixture becomes jam-like.  Remove from heat, fill sterilized jars leaving 1/4 inch headspace, wipe rims with vinegar, top with a warm lid and ring, then place jars in a water bath for 20 minutes. Remove from boiling water, set on a tea towel on counter, and listen for them to seal. Cool completely. *NOTE: We would reduce the amount of cloves to 1/2 teaspoon or less.
