Cooking it slowly means the onions caramelise, the potatoes absorb the rich stock and the top layer becomes crispy!! History of the dish: This dish originated in France, and the name derives from the practice where villagers, who didn't have their own oven in their home, would take the dish to the local bakery (boulangerie) after the baker had finished baking his bread for the day.
