Hello~! This is Hwani's Kitchen. This recipe is for "moon cakes," a symbolic autumn Chinese snack. In China, moon cakes are eaten during the Mid-Autumn Festival. Mid-Autumn Festival is equivalent to Chuseok in Korea. In Korea, they're called songpyeon, and in China, moon cakes. In China, they're called "binggwaryu," and snacks are classified as a type of rice cake. Since they're shaped like a full moon, they're also called "moon cakes" in English. The crust is filled with various ingredients! This is one of my absolute favorite snacks. Ingredients 360g cake flour 250g soup stock 85g lard 1/2 teaspoon baking soda 15cc water Lotus seed paste A small amount of various nuts A small amount of various dried fruits You can also add lemon peel, orange peel, sesame seeds, etc. Try making "Palbo" by matching the numbers up to eight! Lotus Rice Paste Ingredients Lotus Seed Meat 180g Lard 70g Sugar 150g You can also use commercially available paste. Soup Ingredients Sugar 200g Water 120cc Lemon Juice 1 tablespoon Condensed milk or honey can be substituted. Lotus seeds can be purchased at herbal medicine stores or online (search for "lotus seeds" in open markets). In Korea, it's not a very familiar ingredient for medicinal purposes... If you soak it in water and boil it, it tastes like boiled beans (like chestnut beans or chickpeas). Therefore, unless you're a cooking enthusiast like me, I recommend using commercially available white paste. Note that lotus seeds themselves don't have any significant properties, so you'll need to add plenty of dried fruit. You can substitute honey or condensed milk for the sweetener, but the color and flavor will be noticeably different, so it's best to use sweetener if possible. The most popular mooncake in Korea is the one with a bean paste base and plenty of nuts. Sometimes, they even serve it as "palbo mooncake" (palbo mooncake) with just eight ingredients. This is probably because Koreans are more familiar with it. However, in mainland China, they sometimes add salted duck egg yolks or xiangjiang (a type of sausage). The variety of fillings is so vast... There's no need to say, "What should go into a mooncake?" And while it's not China, Vietnam also has mooncakes. I've tried them, and they contain coconut, a typical ethnic ingredient. There's also a type of mooncake called "sou-bing style," which has multiple layers, like pastry. It's made by kneading two different doughs (one with water, the other with oil), then rolling them out and folding them. The delicate, melt-in-your-mouth texture is exquisite.
