Amazingly Tasty Roasted Stuffed Pork Loin - Glen And Friends Cooking

Roasted Stuffed Pork Loin - Glen And Friends Cooking Ingredients: 2 Kg pork loin, butterflied 3 slices bacon, chopped 2 small onions, chopped 2 stalks celery, chopped Salt and pepper to taste 5-10 mL (1-2 tsp) poultry seasoning Handful mushrooms, chopped 1-2 medium apples, chopped 3-4 slices stale bread, cubed Method: Fry the bacon to release the fat, but don’t get it too crispy. Toss in the celery and onion, fry until veg is translucent. Season with the salt, pepper and poultry seasoning. Stir in the mushrooms, and apples and continue cooking until the apple starts breaking down. Stir in the bread, cover and cook 5 minutes. Cool completely before stuffing the pork loin. Preheat oven to 160ºC (325ºF) Lay the butterflied pork loin flat season with salt, pepper and poultry seasoning and then spread on the stuffing. Roll up the loin and truss (tie) with butcher twine. Place in a roasting pan and roast until a safe internal temp is reached (145ºF).
