Today I went looking for a little piece of Vietnam in Singapore. Instead of the usual pho or tourist-style dishes, I wanted to find out what Vietnamese families actually cook at home — and whether I could recreate it myself. I started the day exploring a Vietnamese supermarket where many Vietnamese people in Singapore shop for familiar ingredients from home, before heading to try authentic food and understand the flavours properly. One of the things I love about these kinds of adventures is that they often take me to parts of Singapore I might not otherwise visit. It’s a reminder that exploring another culture doesn’t always mean getting on a plane — sometimes it’s just a train ride away. Then it was back to the kitchen to attempt a traditional dish called Canh Chua (pronounced “Gahng Choo-uh”) — a sweet, sour and savoury Vietnamese fish soup that’s commonly cooked in homes across southern Vietnam. It’s a simple idea: one city, many cultures… and a lot of food I’ve never tried making before.
