Today I’m making slow-cooked lamb shanks with potato and pumpkin gnocchi, a simple vegetable and pea soup, and apple compote using leftover apples to help reduce food waste. Allow both to cool, then peel the potatoes. Pass the potatoes and pumpkin through a potato ricer or mince them for a smooth texture. Add the flour, egg, salt, and turmeric, then gently mix until a soft dough forms. Divide the dough into portions and roll each one into long ropes. Cut into bite-sized pieces. Bring a large pot of salted water to a boil and add a little cooking oil. Carefully drop in the gnocchi. Once they float to the surface, cook for another 1–2 minutes, then remove with a slotted spoon.
