Drop the cleaning brush by pulling the lever on the black handle. Place the lid (with the gasket, of course!) by aligning the two arrows on the lid and the black handle. Apply slight pressure to the lid and slide it clockwise until the two handles are perfectly aligned. Caution: DO NOT place the weight on the valve at this stage. Heat the pressure cooker to full power. Once the safety brush has been raised and steam is escaping from the valve, cook for 10 minutes. This allows all the air to escape from the inside. After 10 minutes, place the corresponding weight on the valve (be careful not to burn yourself!). Allow the pressure to build. The first time you use your autoclave, check the pressure gauge. When working correctly, it will indicate approximately the correct pressure. If not, contact the dealer! The pressure gauge will become misaligned over time. This is not a problem because the weight moving on the valve will always indicate the correct pressure and is reliable. Once the desired pressure is reached, the weight will begin to move on the valve. Stabilize the temperature by slightly lowering the heat under the autoclave. (Caution: The pressure must be maintained at all times!) Start the sterilization timer (this varies depending on the contents and size of your jars). (If the pressure drops during the sterilization time, you must increase the pressure and restart the timer from the beginning!) Once the time has elapsed, turn off the heat and allow the pressure to drop naturally. Rapid cooling may cause the jars to burst. When the pressure gauge reads 0, you can remove the weight from the valve. Be careful not to burn yourself. Wait 10 minutes to allow the internal and external pressures to equalize. Otherwise, the jars may crack. After 10 minutes, open the pressure canner and remove the jars. Allow the jars to cool completely before removing the clips.
