Gastronomie : le bœuf stroganov, quand l'Alsace rencontre la Russie - Météo à la carte

Needless to say, with the dropping temperatures of the last few days, we couldn't have dreamed of anything better. We're offering you this wonderful seasonal recipe on a platter... Ingredients: • 450g beef tenderloin • 450g button mushrooms • 1 onion • 4 tbsp crème fraîche • 2 tbsp flour • 150g tomato sauce • 150cl white wine • Spätzle • Sweet and sour sauce • Butter, olive oil • Parsley • Salt, pepper Preparation: : 1. Cut the beef tenderloin into strips. Marinate the meat in Worcestershire sauce, which can be substituted with balsamic vinegar and lemon. Refrigerate for one hour. 2. Slice and sauté the button mushrooms in a drizzle of olive oil. 3. Briefly sear the meat on the outside. For the sauce, sauté the red onions and add the flour, sugar, white wine, tomato sauce, cream, and precooked mushrooms. 4. Let the sauce cook for 2 minutes, then add the meat and cover. 5. Brown the spätzle in a little butter for 2-3 minutes. Serve. Chef's Tip: You can substitute sweet potatoes for the spätzle.
