We're listening to Chef Christophe's advice for making perfect endives with ham 😜 Ingredients for 4 people: 8 endives 8 slices of cooked ham 60 cl of whole milk 50 g of butter 50 g of flour Salt Pepper Nutmeg 50 g of grated Gruyère cheese Preparation: Preparing the endives 1. Remove the top leaf of the endives 2. Remove the core with the tip of a knife 3. Dry the endives with a damp paper towel Cooking the endives 4. Place the endives in the pressure cooker basket 5. Add a little water to the pressure cooker to steam them 6. Cook them for 10 to 12 minutes maximum 7. After cooking, place the endives, points down, in the basket to drain Preparing the béchamel sauce 8. Make the béchamel sauce. Melt the butter over low heat and add the flour all at once. Stir and cook for 4 minutes. Gradually add the cold milk while stirring. Add the pepper, salt, and nutmeg. When boiling, cook for 1 minute, then remove from heat.
