In this video, I want to share a recipe for one of Makassar's delicious and very popular dishes: Palumara Fish. The fish I use here is Red Grouper, weighing about 1 kilogram. I cut the grouper into small pieces and marinated it in lime juice before cooking. In addition to cooking Palumara Fish using Grouper, you can also use other types of fish, such as snapper, milkfish, or mackerel, depending on your personal preference. The level of spiciness depends on your personal preference. In this video, the Palumara Fish I cook is not as spicy as the typical Makassar Palumara Fish, which reaches a level 10, or very spicy. Here are the ingredients and spices used to cook Makassar-style Palumara Fish, a la Dapoer Om Iffat: MAKASSAR PALUMARA FISH RECIPE 1 kg Red Grouper 1 lime for marinating 2 tomatoes 5 cloves garlic 8 shallots 1 segment of turmeric 1 segment of young galangal 1 stalk of lemongrass 1 segment of ginger 6 curly red chilies 10 bird's eye chilies 1 large red chili 3 kaffir lime leaves Basil leaves, to taste 35 grams tamarind 2 starfruit 1 1/2 teaspoons salt 1 teaspoon mushroom stock 1 tablespoon sugar 1000 ml water Cooking oil for sautéing If you'd like to learn more, you can watch this video showing the cooking process step by step.
