Celebrity Recipe Review: Chef Roy Choi's Blackjack Korean Quesadillas from his Kogi Food Truck

Roy Choi is sharing his famous Blackjack Quesadillas from his popular Kogi food truck out in LA. What's special about these quesadillas? Well, it's a Korean inspired quesadilla with spicy pork belly, cheese and a special green cilantro verde sauce. Fans are standing in line to get a chance to taste Chef Roy Choi's special Korean Mexican fusion menu, but now we can make it ourselves at home! There are a few steps which is why it's special, we have to make our own marinade for the pork belly and our own green cilantro verde sauce. There are a lot of ingredients but it's simple ingredients that you can easily find at any grocery store. The hardest part is waiting for that hot, crisp, cheesy and power punch that's waiting for us at the end of this journey. We've been watching Roy Choi's Netflix show with Jon Favreau called "The Chef Show" and everything is accessible but the combinations are out of this world. Normal quesadillas are delicious, imagine adding spicy Korean pork into the mix. Both sauces were way more than what was needed even if you cut it in half. We think it's best to make 1/4 of what is listed. Trust us! 2. This recipe is supposed to make 4 quesadillas but the sauces if you made exactly as Roy Choi directs, well you're going to be left with a lot of sauce and marinated meat. So make more quesadillas and invite more friends or make smaller batches. 3. It's a lot of cilantro, use your best judgement! 4. Do not add the amount of salt indicated in the recipe we linked above. Start small and add more. Even though we did less than 1/4 of what he said, it was salt overload and we couldn't even use the verde and threw it out. One recipe, tested by two cooks!
