The EASIEST way to cook ANY fish - Skate Wing and Peppercorn Sauce
This is a great way to cook fish consistently in a bag made from parchment and tin foil. You need to add 100ml white wine to the bag before sealing to create the steam. Here my fish took 12-minutes to cook in a 180c oven. For the peppercorn sauce Firstly, sweat down 2 diced shallots in a knob of salted butter. Add 1 tsp crushed black peppercorns and continue to cook, now add 120ml red wine vinager and reduce this fully. Once reduced add 200ml fish or chicken stock and reduce this by 2/3. Add back the juices from cooking your skate. Now add 50ml double cream, bring to the boil and finish with the green peppercorns, chopped parsley, and serve with the fish Happy cooking Adam x
