"Zefir"/Russian Marshmallow, using fruit juice. Delicious dessert, made in 10 minutes.
Zefir is a type of soft confectionery made by whipping fruit and berry purée with sugar and egg whites with addition of a gelling agent like pectin, carrageenan, agar, or gelatin. It is produced in the countries, nations of the former Soviet Union. Usually this dessert is made with apple puree, since apples contain pectin. But in this recipe I want to show you how to make it using fruit juice. Very easy! ZEFIR RECIPE In a standup mixer add: 2 egg whites(65g-70g) 150 g sugar(3/4 cup) dash of citric acid In a sauce pan add: 200g sugar(1 cup) You can add a little bit more if using sour juice. 10g agar agar ( 1 table spoon) 300 ml (1¼ cup)100% fruit juice( I used black cherry juice) You will need a very large piping bag( 24 inches) Open star piping tip(Ateco 857) Large baking tray, lined with parchment paper. First start making syrup. Add all ingredients "in a sauce pan", mix and bring to a boil. It has to boil for 8 minutes. At the same time whip egg whites. Add egg whites and citric acid in a bowl of a standup mixer. Whip until foamy. Gradually add sugar and whip until stiff peaks. By that time you syrup should be ready. Without stopping mixer start pouring syrup in a very thin stream until all added. Mix for couple minutes after that. you can add couple drops of food color tp make your Zefir more vibrant in color. Quickly transfer into a piping bag and start piping. Don't make them too high, since you are only piping halves, that will be pasted together later. Wait for an hour, then dust your Zefir with 50/50 of powdered sugar and corn starch. You can combine halves and leave compete Zefir on a parchment paper to set overnight. Then dust off the powdered sugar and enjoy. Zefir also can be enjoyed as soon ad couple hour after piping, but after 8 hours the texture is better. Thank you for watching! Please like and subscribe!
