The heat is melting us, so we're continuing with summer recipes—the kind that don't require an oven. We're bringing you a salted caramel cheesecake, no-bake and gluten-free too. Here's the step-by-step guide to making this #vegan and #glutenfree #cheesecake Salted Caramel Cheesecake (10 servings) Preparation time: 1 hour Resting and refrigeration time: 5-6 hours INGREDIENTS: Crust: 180g Medjool dates 120g walnuts 120g almonds 3 tablespoons coconut oil Pinch of salt Cheesecake layer: 500g coconut yogurt 80ml agave syrup 1 tablespoon coconut oil 1 tablespoon lemon juice 1 teaspoon vanilla extract 50g cornflour Salted Caramel: 300ml pure coconut milk 1 teaspoon vanilla extract 1/4 teaspoon salt 130g panela (unrefined cane sugar) 30g cornflour · For the crust, grind the walnuts and almonds. • Set aside and blend the soaked dates until you have a date paste. • Mix with the ground almonds and walnuts and the rest of the base ingredients. • Pour into the container you're going to use (we used a 19 cm diameter round one). • Press down with a spatula or spoon. If it sticks, you can dampen it with water. • Refrigerate. • For the cheesecake layer, it's as easy as mixing all the ingredients with a whisk until there are no lumps. • Heat over medium heat in a saucepan until it boils, stirring constantly. In a few minutes, you'll see it thicken. • Pour over the base and let it cool to room temperature until it stops steaming. Then refrigerate for 1 hour. • For the salted caramel, whisk all the ingredients together and heat over medium heat, stirring constantly. Once it boils, continue stirring until it thickens. Pour it over the cheesecake and swirl it around to coat all sides. Refrigerate for at least 5 hours to enjoy it nice and chilled.
