I was there in Amma hotel to try their Poricha meen (Fish fry) that they do with lots of fish masala and serve them hot with the masalas and the coconut oil. We saw the way the cook Meen Porichathu in their kitchen. Inside Amma hotel kitchen, they used a flat pan to make ayala fry, aykoora fry, and shark fry.
