BABA GANOUSH Yield: approx. 1kg 3KG OF EGGPLANTS 200G TAHINI 20G PURE SALT 15G GARLIC 10ML/15ML SQUEEZED LEMON JUICE Preparation method: 1) Grill the eggplants with the skin on over a flame on the stovetop, in the oven, or on the grill. 2) Peel the eggplants while still hot. 3) Mix all the seasonings separately. 4) Season the grilled eggplants. 5) Chill. 6) Serve with pita bread and olive oil. Chef's tips: Eggplants with few seeds are the best. Also choose those with a very dark black color. To make your dish even tastier, you can decorate with pomegranate seeds and molasses, or with pistachios or chopped parsley. This video is part of the cultural project "ST. GEORGE ORTHODOX CHURCH: MEETING OF ARABS IN CURITIBA" by Juliana Cristina Reinhardt, nutritionist and historian, with a PhD in the History of Food from the Postgraduate Program in History at the Federal University of Paraná. ABOUT THE CHURCH With Byzantine-style architecture, it is located at 375 Brigadeiro Franco Street. It was founded in 1954 by Syrian immigrants who professed the Orthodox Catholic Apostolic religion; however, its presence transcends the limits of religion, constituting a traditional meeting place for Arab culture in Curitiba since the 1950s. In 2012, it was the location chosen by the Arab community to discuss the situation in Syria, which was at war, culminating in a meeting between the Syrian consul and Muslim sheikhs to participate in an ecumenical service. Another striking example of this characteristic is what happens with certain celebrations such as weddings and baptisms. Some descendants of Arabs, even if they are not adherents of Orthodox Catholicism and do not attend services, choose to get married in this church. When asked why, they answer: "Because this is the church of the Arabs!" Ethnic and cultural identification ends up overshadowing religious identification. These are some examples of cultural expression that the Church of Saint George presents, a fact that reveals the importance of this space for maintaining the cultural identity of the Arab community. ABOUT THE PROJECT The project consisted of conducting research on the history of the Antiochian Orthodox Catholic Church of Saint George, known as the Church of the Arabs, and also culinary workshops on traditional Arab recipes. This resulted in the publication of the book "ST. GEORGE ORTHODOX CHURCH: ENCOUNTER OF ARABES IN CURITIBA," which outlines the history of Arab immigration, understanding the formation and demands of the immigrant community in our city, the context in which the St. George Antiochian Orthodox Catholic Church of Curitiba emerged. Organized by nutritionist and historian Juliana Cristina Reinhardt, who authored the first chapters, it also includes a chapter by Gustavo Pitz, "The Beginning of Arab-Christian Immigration to Curitiba (1890-1930)," and also by Gabriel Brum, "Consolidation of the Arab-Christian community in Curitiba (1930-1965)," where, in addition to explaining the immigration situation during this period, they introduce us to some members of the Orthodox community through their businesses. Closing the book, a special chapter shows the importance of food as a link that maintains memory, tradition, and identity, through traditional recipes authored by Vaneska Berçani, from the Velho Oriente and Mesmiz restaurants. Other cultural products produced were videos that teach how to make various Arab culinary recipes and also a video presenting the research results with the book's organizer and project proponent.
