Selection and Preparation of the Pumpkin Pumpkin is the main ingredient in this recipe and choosing a quality one is essential. Delica pumpkin is ideal thanks to its compact and creamy consistency. However, the Mantua pumpkin, with its gray color and lumpy shape, is also an excellent alternative. Once you have chosen the pumpkin, cut it in half and cut into slices. Remove the peel and prepare to cook it in the oven. 2. Cooking the Pumpkin Place the pumpkin slices on a baking tray lined with baking paper. Seal the pan well with aluminum to retain moisture, which is essential for keeping the pumpkin soft and tasty. Cook in a preheated oven at 180° for about 40 minutes. Once cooked, let it cool. 3. Preparation of the dough While the pumpkin cools, start preparing the dough. In a large bowl, combine the flours and dehydrated brewer's yeast. Dissolve the salt in the water and also add the honey. Once the pumpkin is ready, blend it until you obtain a puree and incorporate it into the mixture. Mix all the ingredients well, adding the oil little at a time, until the dough is smooth and elastic. 4. Leavening The secret of a good "pumpkin bread" lies in the leavening. Transfer the dough to a lightly oiled surface and form a ball. Place it in an oiled bowl, cover it with cling film and let it rise in a warm place (like a turned off oven) for about 2 hours. The dough should double in volume. 5. Shape and Second Leavening Once it has risen, knead the dough again and give it the desired shape. If you want to give an original touch, you can tie the bread with string, creating eight wedges. Let it rise again for an hour. 6. Cooking and Presentation Before baking, brush your bread with a little milk to give it a nice browning. Bake in the oven at 170° for about 40 minutes. Once cooked, let it cool and then... it's ready to be enjoyed! Pumpkin bread is not only delicious, but with its orange hue and particular shape, it is also perfect as a table centerpiece for autumn occasions. 🍳 INGREDIENTS 🍳 00 flour 400 g Manitoba flour 200 g Delicate pumpkin boiled or baked 300 g Dehydrated brewer's yeast 3.5 g Honey (omit for a vegan version) 20 g Water 130 g Salt 8 g Extra virgin olive oil 30 g Milk for brushing (or for a vegan version) to taste
