In a large bowl, whisk the egg yolks with the sugar using an electric mixer until pale and creamy. Gradually add the melted butter, flour, water, and milk, mixing well after each addition. Whip the egg whites: In a separate bowl, beat the egg whites until stiff peaks form. Gently fold them into the batter. The goal is to slightly break them up without fully incorporating them—you should see a light, foamy texture on top, but no visible streaks of white. Assemble the cake: Line the bottom of your baking dish with half of the pralines roses. Pour the batter over them. Sprinkle the remaining pralines roses on top. Bake & chill: Bake in a preheated oven at 150°C (300°F) for 55 minutes. Let the cake cool completely, then refrigerate for at least 3 hours before unmolding and serving. This cake creates its signature three layers—a delicate sponge on top, a creamy center, and a custard-like base.
