INGREDIENTS FOR 12 BAKING DOUGH: FOR THE DOUGH: 3 cups all-purpose wheat flour = 420g 10g granulated dry baker's yeast = 1 tablespoon or 30g fresh baker's yeast 1/2 cup warm milk = 125ml = 10 tablespoons and a little more if needed 1/2 cup sugar = 110g = 6 tablespoons 1 egg 3 tablespoons soft unsalted butter = 60g 1 tablespoon anise seeds or to taste 1 teaspoon vanilla essence 1/2 teaspoon salt 1 egg beaten with 1 tablespoon grated brown sugar or muscovado sugar FOR THE PAPELON MELADO: 150g panela or brown sugar or dark muscovado sugar = 6 tablespoons 6 tablespoons of water = 75ml FOR THE FILLING: 3 tablespoons of softened butter = 60g 6 tablespoons of grated brown sugar or dark brown sugar = 150g 250g of grated white cheese or any other cheese that melts, plus a little more for sprinkling over the Golfeados PREPARATION: Start by preparing the syrup. To do this, place the grated brown sugar in a pot with the water and cook over medium heat, stirring constantly until it boils and thickens slightly. Set aside. In a large bowl, place the flour, make a well in the center, and add the yeast, sugar, egg, softened butter, anise seeds, half of the warm milk, and the vanilla. Begin kneading with your fingertips. Add the remaining warm milk little by little as the dough becomes thick and firm, kneading until the dough is formed. Now add the salt. Knead a little more. Remove the dough from the bowl. Place it on a floured work surface and continue kneading until it gains body and elasticity and is no longer sticky. Knead vigorously for 10 minutes. Place the dough in a floured bowl, cover with a cloth, and store in a warm, draft-free place for at least 1 hour to allow the dough to rise and double in size. Unevenly roll the dough out on a floured surface and shape it into a square approximately 48 x 48 cm. Spread the surface of the dough with butter, leaving a clean edge of about 2 cm. Spread the papelón and grated cheese over the butter. Start rolling it horizontally into a roll and pressing it down. Cut it into approximately 4 cm circles. Place them on a baking sheet lined with parchment paper or flour, store them, and let them rise for 1 hour in a warm place. Brush them with the beaten egg mixed with the tablespoon of papelón or brown sugar, and add a little grated cheese on top. Bake for 25 to 30 minutes (depending on the oven) at 180°C. Turn off the oven, then brush them with papelón syrup. Add a little more grated cheese on top and leave them in the turned-off oven for about 5 more minutes. These soft, smooth, and delicious golfeados are ready to be eaten. You're sure to love them!
