Creamy Orzo with Bacon and Peas!
Hi friends! I'm Amy, and today we're making one of my favorite dishes ever! We;re making Creamy Orzo with Bacon and Peas, and this is possibly my favorite of all the favorite dinners. It's so easy to make, and tastes so good you'll want to eat it every week! I have the full recipe below, so let's get cooking! Creamy Orzo with Bacon and Peas 1 pound orzo pasta 2-2 w/2 cups frozen peas 6-8 slices of bacon 5-5 1/2 cups chicken stock/broth 3/4 cup freshly shredded Parmesan cheese Salt, Pepper, Garlic Powder, Onion Powder to taste 1. Measure out 2 to 2 and a half cups of frozen peas and set to the side. Pour 5 to 5 and a half cups of chicken stock/broth into a medium sauce pan. 2. Cook bacon to preferred crispiness, either in the oven or in a large skillet. For the oven, line a baking sheet that has a rack with foil and place the bacon on the rack. Bake at 400 for 20 minutes or until the bacon is at your favorite level of doneness. Remove bacon slices to a paper towel lined plate and carefully use the foil to pour the bacon grease into a large skillet. Chop cooked bacon into bite sized pieces while the pasta is cooking. If cooking in the pan, chop the raw bacon into bite sized pieces and cook until crispy. Remove bacon pieces to a paper towel lined plate and reserve about 2 tablespoons of the grease in the pan. 2. Heat the large skillet until the bacon grease just starts to bubble. Add in 1 pound of orzo, and toast in the bacon grease for 3-4 minutes until the pasta starts to turn a light golden brown. 3. Very carefully, pour the hot chicken stock into the skillet with the orzo and stir. Add salt, pepper, and optional garlic powder, and onion powder to taste, but go light on the salt at this point. Stir to combine, and simmer uncovered for 10-12 minutes or until the orzo is cooked through and has absorbed most of the liquid. 4. Pour in the peas and stir to combine. Cook for a minute or two until the peas are heated through. Add the shredded Parmesan and stir until the cheese is melted. Add the bacon and stir to combine. Cook for another minute to make sure the bacon is heated through. Test for any additional salt and season to taste. 5. Serve immediately as is or with some additional shredded Parmesan on top!
