Chicken cutlets are a simple and delicious main course, a classic Italian dish loved by both adults and children. They're made with chicken breast slices, coated in flour, eggs, and breadcrumbs, and pan-fried. In this video, our Chef Julia will show you how to cook crispy chicken cutlets on the outside and tender on the inside, and she'll reveal all the tricks for perfect, non-sticky breading! METHOD 00:00 Prepare the chicken breast slices 01:00 Prepare the breading ingredients 02:17 Pat the meat dry 02:55 Coat the meat in flour, egg, and breadcrumbs 06:04 Fry the cutlets INGREDIENTS ✔ 600g chicken breast ✔ plain flour to taste ✔ salt to taste ✔ vegetable oil to taste ✔ breadcrumbs to taste ✔ parsley to taste ✔ 3 eggs to taste ✔ Parmesan cheese to taste 👩🏻‍🍳​ Julia's tips for cooking the perfect breaded chicken cutlet: To prevent the cutlet from "curving," pound it with a meat tenderizer and trim off any tough strands that might become stiff during cooking. To prevent the breading from peeling, pat the meat lightly with paper towels to remove excess moisture. Don't add salt, as the meat would release liquid during cooking. To coat the cutlets perfectly, first dip them in flour, then in egg, and finally in breadcrumbs, pressing firmly on both sides to ensure the breading adheres well and removing any excess. You can also use panko instead of breadcrumbs for an even crispier result. If you like, you can freeze the breaded cutlets raw by first placing them on a sheet of parchment paper and then, once they're firm, placing them in freezer bags. You can then fry them directly as needed. To fry the cutlets, we recommend using peanut oil, as it has a smoke point of up to 230°C and a neutral flavor. Alternatively, you can use high-oleic sunflower oil, which has a higher smoke point than regular sunflower oil, or clarified butter, which has a smoke point of up to 250°C and makes for a very crispy fry.
