Babka bread with chocolate and walnuts If you want to delight yourself with something sweet and delicious then you might consider making this “Babka bread” which is amazing, tastes even better than other chocolate pastries bought from shops or the high street and ☝️ the most important is that it is free of preservatives and food additives! Ingredients: 540g flour 250g of milk 4 eggs 100g sugar 10g dry active yeast 4 drops of vanilla essence 1 tbsp of salt Chocolate filling: 200g chocolate 120g of cream (we use single) 100g of butter Syrup: 1/2 cup of sugar 1/2 cup of water Preparation: Mix in a bowl the eggs, 1 tbsp of salt, vanilla essence and milk. In the bowl of a stand mixer fitted with a dough hook, add the flour make a well in the centre and add sugar, yeast, eggs and milk mixture and mix at low speed for about 2 minutes. Increase the speed to medium and add the butter, a little at a time. Mix well between each addition. Once it’s all incorporated mix to 10min more. Transfer the dough to a large oiled bowl, and cover it with a cling film. Leave it to rise overnight in the fridge. Next day! Before taking out the dough from the fridge make the filling. Chop the chocolate (We used 1 bar of plain dark chocolate 70% and another one with orange and almonds - that orange flavour will give such an amazing taste to your babka bread). In a pot add the butter and cream and put it on low heat until the butter is melted, switch the heat off and add the chocolate ( make sure that cream and butter are not too hot, otherwise it might overheat your chocolate and ruin the whole mixture) Pour the chocolate into a bowl and leave it to cool and thicken slightly. Take the dough out of the fridge, put it on a lightly floured surface and divide it in half. Put the other half in the fridge for a while. Start to roll out the dough in a rectangular shape 5mm thick. Use an offset spatula to spread the chocolate filling over the rolled dough, optionally add about 50g of roasted and chopped walnuts on top or just as much as you want. Roll up the dough like a roulade, seal the dampened end onto the roll and rest it on the seam. Gently cut the roll in half lengthwise, and twist the halves together, keeping the cut sides facing up. Transfer the dough to a prepared loaf pan. Cover and let rise again for about 2h then cook in the oven at 160°C for 40min or until nice and golden. While the babka is cooking, make the syrup by bringing to a boil 1/2 cup of sugar and 1/2 cup of water then leave it to cool. Once the babka bread is ready, take it out of the oven and spread the syrup on top while is hot. Leave it to cool for 1h then serve warm or cold. Make yourself a cup of tea and Enjoy 🫖🤤. Cheers!
