If you want phenomenal and budget-friendly food at home, you need to build or buy a wood-fired oven. In this video, we’ll talk about all the things you need to know regarding wood-fired ovens: the wood, the tools, and the best cooking temperatures for different dishes. At the end, I’ll tell you the five reasons why it’s the best choice you’ll ever make! Alright, let's start talking about the wood I used in my oven. I typically use different types, but my top choices are acacia and olive firewood. Okay, let's talk about the tools I use with my wood-fired oven. At the top of the list is a metal pizza peel. This multitasking tool serves a dual purpose. First, it's perfect for managing and spreading the coals inside the overn. This allows me to ensure an even distribution and precisely control the internal temperature. Second, it can be used to removing cooked pizza or anything else cooked on the flat inner surface of the oven. I also have is a wooden pizza peel that I use specifically for pizza. Another useful tool is a Tuscan grill. I use it for grilling meats inside the oven, such as steaks, chicken breasts, and even my cheeseburgers. I have a different version of this grill designed specifically for cooking fish or lamb chops at the highest temperature possible. The last tool is this metal contraption. I'm still trying to figure out what to call it. I designed it specifically to suspend skewers of chicken, steaks, or even veggies. I enjoy grilling my steak inside the oven, right over the coals. This method ensures my steak is ready in as little as two minutes. Okay, let's now talk about temperature and dishes, beginning with the firing stage. During this initial phase, the temperature slowly rises from 0 to 800 degrees Fahrenheit. At these temperatures, I roast potatoes and fish or make cheesy garlic bread. For the next stage, which I call the pizza stage, the temperature ranges from 700 to 900 degrees Fahrenheit. Yes, you can achieve 900 degrees with your wood-fired oven. This high temperature is perfect for baking Neapolitan pizza or any type of pizza dough. Additionally, at this temperature, I grill my steaks, as cooking steak at the highest temperature is the best way to achieve that perfect sear. Now, let's talk about my favorite temperate range, right between 500 to 700 degrees Fahrenheit. I call it the roasting stage, and this is where I do most of my cooking. There are plenty of recipes suitable for this stage, roasted chicken, turkey, goose, and duck. And definitely the most flavourful baked barbecue ribs, a large pan pizza for the whole family, a cast iron pizza, and of course, the best lasagna ever. The last stage, which I fondly refer to as the bread stage, operates within the temperature range of 300 to 500 degrees Fahrenheit. Before bread baking, allow me to show you my two most cherished recipes in the wood-fired oven: roast beef shanks with potatoes and a whole leg of lamb. At this temperature, I let the meat cook for 3 to 6 hours, bringing out the best flavors in the cuts. And, of course, it's no secret that all kinds of bread taste better when prepared in a wood-fired oven. These flat breads with olive oil are simple but delicious with any meal! Now, let me share with you reasons to buy or build a wood-fired oven in your backyard. First and foremost, it can make any food taste better. Cooking in a wood-fired oven elevates the flavor of every dish. The natural wood smoke imparts a unique and savory taste that can't be replicated with other cooking methods.
