LACCHA PARATHA
*Lachha Paratha: Indian/Pakistani Flaky Flatbreads* Lachha Parathas are delicious, flaky flatbreads from India and Pakistan, perfect to accompany your meals. In Pakistan, they're also known as Pheni Parathas and are quite popular. *Ingredients:* 100 g all-purpose flour 250 g whole wheat flour 2 tablespoons oil About 190 ml warm water (adjust as needed for dough consistency) Salt Ghee for layering *Instructions:* 1. In a large bowl, mix the flours and salt. 2. Make a well in the center of the flour mixture, add the oil, then gradually pour in the warm water while mixing to form a dough. 3. Knead the dough until smooth and elastic. Lightly coat with oil, cover, and let it rest for 30 minutes. 4. After resting, divide the dough into 7 to 8 equal portions and shape each portion into a ball. 5. Roll out each ball into a thin circle, brush the entire surface with a bit of melted ghee, then cut into very thin strips. 6. Gather the strips together, lightly brush with ghee again, gently stretch to form a long strip, and then roll it up into a spiral shape. 7. Roll each spiral into a 25 to 26 cm circle, either by hand or with a rolling pin. 8. Cook each paratha in a hot skillet, just like you would for Comorian couscouma or Mauritian faratas, until they are golden and crispy.
