Cornetto is one of the most well-known ice cream classics in the supermarket, complete with a crispy cone, creamy ice cream, and a chocolate tip. But to ensure the ice cream keeps its shape even in the sun and doesn't melt immediately, the manufacturer uses a trick that comes from the depths of the sea. Sodium alginate, a substance derived from brown algae, provides the ice cream's stability. The next trick is hidden inside the cone: it's sealed with a cocoa-based fat glaze to keep it nice and crispy and prevent it from becoming soggy.
