How to Make Elderflower Cordial

The elderflowers opening are a real sign that summer is on the way. This homemade elderflower cordial is a refreshing late spring treat. Fresh, floral and incredibly easy to make. Try it with water, lemonade or even champagne! It keeps in the fridge for a few weeks, or freeze for longer term storage. You'll need around 20 elderflower heads, the zest and juice of 3 lemons, zest of one orange, 850g of sugar and water. Simply add the zest from the citrus and the elderflower heads to 1.5 litres of just boiled water. Stir and allow to steep for 12-24 hours. Then strain the liquid through a muslin cloth, add the liquid back into the pan with the juice from the lemons and the sugar.
