I’m so glad you’re here again for another little vlog with me ♡ This vlog started with me going out to meet a friend for a quick coffee date, which honestly felt so nice and refreshing. After coming back home, I made myself some pasta for dinner because I had been craving pasta for the longest time and it had genuinely been a while since I last had some 🍝 I also started watching Pursuit of Jade on Netflix and I’ve been enjoying this C-drama SO much lately. Definitely one of my recent comfort watches ✨ A little later, I decided to bake a Mother’s Day cake and wanted to do something inspired by a blueberry cheesecake. It turned out so good and everybody at home absolutely loved it, which made me so happy 🫐🎂 We also went out to celebrate Mother’s Day together, but I completely forgot to vlog any of it 😭 After coming back home, I had a slice of cake, spent some time reading King of Gluttony by Ana Huang, and honestly had the coziest evening ever. Then… I disappeared from the vlog for a few days because I forgot to film again 😭 but after around three days, I went out for a solo lunch date before heading to watch The Devil Wears Prada 2, which I really enjoyed 🎬 I had lunch at Scarlet in ManiSquare and I would 100% recommend the place if you’re looking for a cute spot to eat 💌 I came back home with a little dessert from Scarlet and ended the night watching my favorite K-drama I’ve seen this year — The Perfect Crown 🤍 Hope you enjoy spending these few days with me 🌷 Don’t forget to like, comment, and subscribe if you’d like to see more vlogs from me! ——————————————————————— For the blueberry cake : 🥣 Dry Maida: 120 g Baking powder: 4 g Baking soda: 1 g Salt: 1 g ⸻ 🧈 Wet Butter: 35 g White sugar: 80 g Brown sugar: 10 g Oil: 12 g Thick curd: 120 g Buttermilk: 80 g Lemon zest: from ~½ lemon Lemon juice: 15 g Vanilla: 4 g ⸻ 🫐 Blueberries Blueberries: 75–80 g Flour coating: 3 g Preheat oven at 170-180•c .Mix the dry ingredients and the wet ingredients in seperate bowls first and then combine them both. Do not overmix. Coat blueberries in a little flour and fold into the batter. Bake for 28-35 minutes checking it until a toothpick comes out clean. The cake would be very soft so let it cool down and refrigerate for atleast 4 hours before frosting it. 🫐 BLUEBERRY COMPOTE Ingredients 120 g blueberries 18–22 g sugar 5 g lemon juice 15 g water Optional: tiny pinch salt little lemon zest Method Cook everything on low-medium heat for: 5–8 mins Cool it completely before using. Use the leftover syrup in the pan left after taking out the compote and mix some water into it for the syrup. Add maybe 1tbsp sugar and mix it well. Soak the cake using this syrup. WHIPPED CREAM CHEESE FROSTING Ingredients 150 g cream cheese (room temp) 240 ml non-dairy whipping cream Little bit of lemon juice and vanilla essence Optional: 1 tbsp or more icing sugar if needed after tasting (adjust accordingly) ⸻ Method 1. Beat cream cheese until smooth 2. Whip cream separately to soft-medium peaks 3. Fold together gently Do NOT overwhip. Layer the cake into two parts. Add compote and frosting in the middle and then crumb coat it. Let it chill for 40 minutes. Frost the cake again and decorate it with candied lemons and blueberries.
