Recently I was asked if a particular dutch oven would work for chili on a pellet grill. This got me thinking that a quick primer might help some folks when choosing a dutch oven. It should be easy, these are not complicated instruments and have been around for hundreds of years. Heck, rumor has it that the only two things Lewis and Clark brought back from their famous expedition were their rifles and their dutch ovens! In reality there are a lot of choices, not just in brands but in sizes, shapes, enameled or not, etc. This is a short primer on dutch ovens, it doesn't go into great detail comparing brands or advocating for one type over the other but does cover the basic styles.
