Topic: Nutritional management and its direct impact on meat quality attributes Speakers: Dr. Dan Quadros, Assistant Professor, Department of Animal Science, University of Arkansas System Division of Agriculture, and Dr. Homero Salinas, Associate Professor, Extension State Specialist Small Ruminant Program, Lincoln University. Dr. Dan Quadros is an Assistant Professor, Small Ruminant Specialist in the Department of Animal Science at the University of Arkansas Division of Agriculture. He received his B.S. in agronomy, master’s and Ph.D. degrees in animal science from Sao Paulo State University in Brazil. Later, he received another master’s degree in sustainability studies from Penn State University. Additionally, he spent 6 years as a research scholar and postdoctoral research associate at the University of Florida and Texas A&M AgriLife Research, respectively. Before joining the University of Arkansas, he was a professor at Bahia State University in Brazil for 15+ years, where he founded the Animal Science Research and Extension Center and led several large-scale livestock extension programs. Over the years, his research has explored many facets of livestock production, including pastures, nutrition, health, milk quality, and meat quality. His work at the University of Arkansas has focused on applied research and education to increase the efficiency and profitability of small ruminant production, improve milk and meat quality, and expand markets for small ruminant products. Dr. Homero Salinas-González is an Associate Professor, State Extension Specialist, and researcher with Lincoln University of Missouri Cooperative Extension in Jefferson City, Missouri. His work focuses on small ruminant production, pasture and forage systems, and farm risk management, with a strong emphasis on supporting farmers through practical, research-based education and outreach. With more than 30 years of international experience in research, extension, and agricultural development, Dr. Salinas has led numerous projects in livestock production, pasture management, and sustainable farming systems across the Americas and other regions. His work brings together universities, government agencies, and producers to strengthen resilient agricultural systems, improve producer decision-making, and promote risk management strategies that support sustainable and profitable farming.
