This Thai Soup Wakes Up Your Whole Mouth!

Learn how to make Tom Yum soup at home with this bold, fragrant, and creamy Thai soup recipe. Tom Yum is one of Thailand’s most famous dishes, known for its balance of hot, sour, salty, and aromatic flavors. This version is made with shrimp, mushrooms, tomatoes, onions, lemongrass, galangal, makrut lime leaves, Thai chilies, lime juice, fish sauce, and evaporated milk. In this video, I’m making a large batch of Tom Yum Goong for a gathering, but you can easily scale it depending on how many people you’re cooking for. Ingredients • 3 garlic cloves • 4 liters water (about 17 cups) • 8 stalks lemongrass • 1 generous handful galangal, cut into strips • 20 makrut lime leaves • 2 Thai chilies • 10 cloves garlic, peeled • 1 kilo shrimp (about 2.2 lb) • 500 g mushrooms (about 1.1 lb) • 4 Roma tomatoes • 3 medium white onions • 2 spring onions • 4 tsp sugar • 8 to 12 tbsp fish sauce, or to taste • Juice of 12 limes, plus 1 extra lime for serving • 1 large bunch cilantro • 1 can evaporated milk (250 g / 8.8 oz) Notes • This is a large batch made for hosting. Adjust the quantities depending on how many people you are cooking for. • Tear the makrut lime leaves instead of cutting them to help release more flavor. • Do not discard the shrimp heads and shells — they are used to build the broth. • Be careful not to overcook the shrimp once they go back into the soup. • Taste and adjust the soup before and after adding the evaporated milk, as the balance will change.
