SECRET TO MAKING THE BEST FRIED SHRIMP

Tired of fried shrimp with heavy breading. Well here's the secret to making these lightly breaded shrimp that are full of flavor. INGREDIENTS 1lb uncooked shrimp (peeled and deveined) 2C All Purpose Flour 4 Large Eggs 1.5TBSP Salt 1.2 TBSP Fresh cracked pepper 3 TBSP Old Bay Seasoning DIRECTIONS FOR PREPPING SHRIMP Peel and devein shrimp, discard veins into garbage. ***Save shrimp shells and store in freezer bag, they make great stock for gumbo and seafood soups. With a sharp paring knife, split shrimp down the middle. **Do not cut to deep into the shrimp** DIRECTIONS FOR THREE STEP BREADING PROCESS Mix together all the dry ingredients and separate into two dishes for breading. In a separate bowl, whisk together eggs and add 1tsp of Old Bay Seasoning, 1/2tsp salt and 1/2 tsp of fresh cracked pepper. Use 3 step breading process to coat shrimp starting with seasoned flour mixture, seasoned egg mixture, and ending with seasoned flour mixture. Be sure to coat the shrimp lightly, the end result should be very light and crispy. Fry in hot oil for approximately 1.5 minutes until shrimp are golden brown. Time will vary depending on the size of your shrimp. I recommend 31/40CT shrimp, which means you get approximately 31 to 40 pieces per pound.
