In Maria's Tips and Tricks, we prepare some delicious Colombian empanadas. I used beef brisket because it's easier to shred. 1 kg of beef brisket, 500 g of potatoes, We cook the meat in a pressure cooker until very tender, adding beef broth (Maggie or any brand you prefer) and coloring. We cook the potatoes with salt in plenty of water until very soft. We make a sofrito with onion and tomato, garlic, oil, and butter. We prepare the dough with precooked cornmeal, soaking it in the meat cooking liquid, and adding 2 tablespoons of cornstarch. The dough should be quite firm.
