Simple Recipe: Amount Ingredients 1 Cup Whole Milk 1/2 Cup Salted Butter 2/3 Cup Warm Water 1/2 Cup Sugar, Granulated White 1 Tablespoon Active Dry Yeast 2 Ea Large Eggs, Beaten 2 teaspoons Vanilla Extract 5 1/2 Cups All Purpose Flour 1/2 teaspoon Nutmeg 1 teaspoon Salt Filling 1 Cup Sugar, Brown, Packed 2/3 Cup Chopped Pecans 1/2 Cup All Purpose Flour 2 teaspoons Cinnamon 6 Tablespoons Butter, Salted, Melted Icing 2 Cups Powdered Sugar 3 Tablespoons Whole Milk 1 Tablespoon Butter, Salted, Melted 1 teaspoon Vanilla Extract Procedure Heat Milk and Butter in microwave until melted and warm. Meanwhile, separately combine warm (110° F or so) water with 1 teaspoon or so of Sugar, and Active Dry Yeast. Stir Yeast mixture and set somewhere warm for 7-10 minutes, or until foamy. Once Yeast is ready, mix with the Milk mixture, add in remaining Sugar, Beaten Eggs, Vanilla,1 cup of AP Flour, Nutmeg and Salt. Turn stand mixer on low with a dough hook, and begin mixing. Once everything is incorporated add remaining Flour, 1 Cup at a time. Once Flour is in, let mix on medium for 8 minutes or so, until smooth and silky. Turn dough onto lightly floured surface, kneed a couple of times and return to clean, lightly oiled bowl. Cover and place somewhere warm to rise for 1.5-2 hours, or until doubled in size. In a small bowl combine all filling ingredients, except the Butter. Slowly add the Butter, while mixing, until crumbly. Divide Dough into 2 even pieces. Roll each Dough Piece into a 10"x16" rectangle and spread half of the Filling mixture evenly on each, leaving one long side of each with about 1" clean. Roll each sheet of dough into a log, sealing with the CLEAN edge. This makes it stick better. Place each dough log onto a lined baking tray. Form each into a circle, pinching the ends together to complete and join. Cut small slits on top of the circle, from inside to out. Cover loosely and let rise somewhere warm for 45 more minutes. Meanwhile preheat oven to 350°F. Bake for 25 minutes or until golden brown and passes the clean toothpick test. While you let the King Cake cool completely, make the ICING.
