In the new episode of the podcast ✰ under the stars, my guest is Benito – a musician, hustler, and co-founder of the Warsaw restaurant Casa di TUZZA, a place that has become a classic in the capital's gastronomy scene for many. Although he previously achieved success in the music industry (as part of the legendary rap duo TUZZA and by releasing music solo), he decided to enter the world of gastronomy and build a concept based on Neapolitan pizza. We talk about building a business from scratch, the challenges that arise at the start, and how the support of music fans has been so helpful. Benito discusses the realities of running a restaurant, the responsibilities of being a boss, and how managing people is no easy feat. We devote a lot of space to pizza itself – we discuss the differences between classic Neapolitan dough and a modern approach, and how in Italy you can eat both brilliant and completely mediocre dishes.
