It's an old tradition in Saint-Jean that allows us to produce this very distinctive wine, which can replace a red. It involves aging the wine in demijohns in the sun for 6 to 8 months, depending on the sunlight, to naturally stabilize it and impart aromas of Madeira, an exceptional spice.
